Just a couple of weeks ago, after a lot of speculation, I got promoted from “Alex Shamash Bobrowski, Assistant Chef” to “Alex Shamash Bobrowski, Station Chef” at Holiday Inn Paris Elysees. This is something I have been striving for since I graduated from Le Cordon Bleu, Paris, 7 years ago. I started out as an apprentice and have managed to go up the grade.

I had always wanted to be a chef, a famous one at that. Cooking is my passion. My job as a Station Chef is quite hectic and requires a lot of dedication & patience, which I have in abundance. As a kid, my friends back home in Warsaw, used to tease me ‘Shamash the Patient’. But that never bothered me. Have been focused since my childhood and even managed to get good grades in school.

What fascinated me always was the way my mom cooked so effortlessly and everything she cooked turned out great. Used to wonder how she did that. But then I suppose that’s something every mother has, the magic to create wonders.

Coming back to me, in a few years I am going to set up my own Restaurant back home in Warsaw called “Shamash, The Chef”. I have some great plans for the restaurant. It is going to be one of a kind, the focus being quality over quantity.

Well, I’ve got to get to bed now. Have a long day ahead tomorrow at the hotel.
